The store's owner can add any kinds of checkout attributes, ex. file or etc.

How to upgrade all our plugin?

Download new release from our site (you can do it as a Guest without registration, each plugin page has the button 'Download').
Replace all files from new ZIP file (all files and SQL files too) and restart your site.
Plugin will upgrade itself.

Disable GZIP Compression.
All existing IIS servers support GZIp from the box.

I am sorry that you wait for this answer.
I can't replicate this problem. If customer set VAT number plugin sends it to server and changed the order total...
